The role of the Courier is to service a set area of concession stands, selling change and picking up drops.

OPS Courier is ONLY a seasonal/temporary event based position. Shifts and hours will vary depending on specific event needs. 

Essential Duties and Responsibilities:                                                                                       

  • Drive a golf cart and walk to concession stands, accompanied by security
  • Sell change to concession stands
  • Pick up and log drops from concessions

Qualifications Requirements:

  • Cash handling experience
  • Able to walk for long periods of time
  • Must be 18 yrs of age
  • Must be friendly, personable, and reliable
  • Ability to work with others and take direction
  • Able to work in all kinds of weather

Job Summary:

Cleaning of kitchen and dining areas, under the general supervision of the department manager/chef, in accordance with Americrown Standards.

Essential Functions:

• Empties trash and cleans garbage pails
• Brings garbage to dumpster
• Breaks down boxes and brings to compactor
• Maintains ice dispenser filled at all times
• Sweeps and mops floors
• Stocks supplies such as food, dishes, and utensils in serving stations, cupboards, refrigerators, and salad bars
• Stocks, organizes and cleans condiment areas
• Transfers supplies and equipment between storage and work areas, by hand or using hand trucks
• Rotates to other areas when needed
• Reports to work scheduled events in a timely manner
• Assists with accepting delivery items and storage of such items
• Performs other duties as assigned

Job Description Overview

The dishwasher role is a very important part in day to day execution in the kitchen. Their main role is to keep and maintain the kitchen as well as the equipment.  Dishwashers may perform smaller food prep tasks assigned by direct supervisor.

Detailed Role and Responsibilities

  • Report to Lead supervisor who is assigned at the beginning of each day to go over game plan
  • Must complete the servsafe sanitation program and adhere to all guidelines set forth
  • Follow all HACCP Guidelines set forth by Americrown
  • Follow the direct supervisors lead in following Safety guidelines set forth by Americrown Safety Committee
  • Store food in designated containers and storage areas to prevent spoilage
  • Assist in the production in some foods, such as meats, vegetables, desserts, according to supervisor’s instructions, following approved procedures
  • Empty all the garbage cans to the dumpster at the loading dock
  • Clean all floor drains at the end of each shift
  • Clean the loading dock and debris around dumpsters
  • Clean and maintain all equipment
  • Bus the plates, glasses and silver ware of every event
  • Help in the plate ups when needed
  • Load dishwasher with dirty dishes as needed
  • Make sure that the dishwasher machine is set up and cleaning properly
  • Check Dish machine daily to make sure all temps are recorded and running at standard temperatures
  • Keep and maintain a clean workstation at all times
  • Make sure that the dishes are clean and sanitized
  • Sweep and mop kitchen as needed
  • Clean walls, food storage racks, cambros, and carts as needed
  • Inform supervisors when equipment is not working properly and when cleaning supplies are getting low

Job Description Overview

Hot and Cold Food Prep Cooks are a vital role to our culinary operation at Daytona International Speedway.  Cooks  are responsible for working with a team of other food prep cooks in prepping all hot and cold food for event day catering and other parties  leading up to the events.

Detailed Role and Responsibilities

  • Meet with Executive Chef for pre shift meeting before beginning production each day
  • Meeting with a team of 4-12 food prep cooks daily during prep days leading up to the event to go over all hot food production for each day
  • Follow all production sheets and directives given by the chefs
  • Must complete the servsafe sanitation program and adhere to all guidelines set forth
  • Follow all recipes according to standardized cookbooks and pictures
  • Manage Hot Food Push for quality and quantity assurance
  • Follow all HACCP Guidelines set forth by Americrown
  • Recording and completion of log sheets (Final Cooking Temperatures, Cooling Logs, Cold Food Holding Logs)
