Summary
Responsible for preparation Food & Beverage business analysis in addition to ad-hoc and statistical analyses supporting business operations and the strategic plan.

Essential Duties and Responsibilities (other duties may be assigned):

  1. Effectively integrate into the Company’s strategic planning
  2. Analyze, and communicate business unit’s initiatives and strategic objectives
  3. Effectively coordinate and integrate the results of planning key business drivers and through cross-functional collaboration
  4. Prepare analyses and presentations for Food & Beverage business
  5. Implement effective utilization of available systems tools and resources to drive enhanced efficiency and to produce clear/concise business analysis reporting
  6. Timely and accurate preparation of ad-hoc business analyses as requeste
  7. Observe and analyze processes and implement systems to create efficiencies
  8. Statistical modeling on Excel to effectively communicate captured empirical data
  9. Build Access databases in conjunction with F&B management needs

Supervisory Responsibilities

No direct supervision, however this role requires the ability to manage timely delivery of business analyses/work product through direct cross-functional collaboration across the Food & Beverage business unit and across the business enterprise including multiple business units.  This role works closely with the VP of Food & Beverage, and other department/business-unit leaders, directors, and managers

Education and/or Experience

  • Bachelors degree in Statistics or Business Management from an accredited university
  • MBA or advanced degree preferred
  • Specific academic and/or business-related experience performing business analysis
  • Experience developing queries/reporting a plus

  • Demonstrated proficient and advanced use of Microsoft Excel, Word, PowerPoint, Access, VBA
  • Strong technical skills with business modeling and statistical analysis

Summary: The executive chef is primarily responsible for assigning responsibilities among the kitchen staff to ensure that food preparation is efficient, served on schedule and to rectify any problems that arise. This position will be responsible for designated venue locations in addition to traveling and assisting in other venues. This position will report directly to the FBM Manager with reporting alliance to the Corporate Executive Chef.  In addition to overseeing all food production, the duties of the executive chef includes the following:

Sous Chef - Americrown Service Corporation (Brooklyn, MI)








SUMMARY:
As a Sous Chef for Americrown Sports and Entertainment accounts you are the lead manager for all food preparation and presentations during the event week. This is a working operational management position. You will provide support for the local Executive Chef. You will ensure quality, safety, financial and vision goals are met within the scope of your responsibilities. You will lead and train kitchen personnel. Also supervise/coordinate all personnel engaged in preparing and cooking foods in related culinary activities. Assist Executive Chef in estimated food consumption and requisition or purchase food. Adhere to standardize production recipes to ensure consistent quality. Strictly follow Americrown presentation techniques and quality standards. Ensure proper equipment operation/maintenance. Closely follow the Americrown HACCP program. You may oversee special catering events; also offer culinary instruction and/or demonstrations of culinary techniques. The Sous Chef reports to the Chef de Cuisine and local Executive Chef when in event support role.

ESSENTIAL FUNCTIONS:

Management

  • Assists in the development and planning of concepts of service, policy, procedures and menus for events, special functions and onsite catering.
  • Assists in the preparation, recommendation and implementation of departmental budget. Monitor progress each Event/Month and throughout the year.
  • Assists in the development and implementation of short and long term goals/programs.
  • Identifies researches, develops, recommends and implements policies and procedures relating to food preparation.

Supervision

  • Supervises the training and cross training of kitchen staff for different phases and levels of food preparation.
  • Reports all maintenance and repair needs to Executive Chef.
  • Supervises local fire pad operations.

Food Preparation

  • Supervises, expedites and participates in food preparation, in accordance with standards of quality, quantity, safety, sanitation, taste and presentation.
  • Assists in the development of food specifications.
  • Conducts and develops portion control tests for yield and quantity.
  • Prevents spoilage and contamination of food by enforcing proper sanitation practices.
  • Inspects the delivery of food to ensure quality.
  • Supervises the creation of attractive food displays.
  • Checks food for taste, temperature and visual appeal.
  • Manages HACCP Program with all Sous Chefs, supervisors and ensures HACCP logs are accurately filed.

Administration

  • Attends and conducts Sous Chef and supervisors meetings to ensure coordination of activities, and review of policies and procedures.
  • Meets with other department supervisors to plan and coordinate food service and distribution operations.
  • Ensures compliance with departmental policies, rules and regulations.
  • Reviews and approves food requisitions, inter-kitchen transfers, production quantities and prepares event day documentation

QUALIFICATIONS

  • AOS/BS in Culinary Arts or equivalent experience
  • Minimum 5+ years of industry & culinary management experience in high volume food service.
  • Ability to manage in a diverse environment with focus on client and customer service
  • Experienced and proficient in the latest sanitation and HACCP standards.
  • Ability to control cost - food & labor
  • Experience in demonstration cooking
  • Menu writing and development ability
  • Computer literacy including Microsoft Office software
  • People management and culinary leadership experience
  • Personnel development and training.
